Spruce Pine, NC – The Mitchell County Chamber of Commerce, in partnership with the Town of Spruce Pine and the Mitchell County Economic Development Commission (EDC), proudly hosted a ribbon cutting ceremony on Wednesday, June 11, to celebrate the grand opening of Thai Table, a vibrant new restaurant located on Locust Avenue in the heart of downtown Spruce Pine.
This ribbon cutting marks more than the opening of a new business—it represents a milestone in Mitchell County’s comeback following the devastation of Hurricane Helene. Thai Table is the first business reopening downtown since the storm, and today’s celebration stands as a symbol of hope, resilience, and community unity.
“This ribbon cutting is more than just a ceremony—it’s a powerful moment of progress,” said Patti Jensen, Mitchell County Chamber of Commerce. “We’re proud to stand with our downtown businesses as they rise and rebuild. Supporting local is how we recover—together. Thai Table’s opening is a reminder that brighter days are ahead for Spruce Pine and all of Mitchell County.”
The Mitchell Chamber and the Mitchell County EDC are working closely to feature and promote new business openings and re-openings across the county through a joint marketing effort. This campaign will highlight each business as a sign of economic recovery and a reason to celebrate community spirit.

Community members, leaders, and supporters gathered at Thai Table to enjoy a first look at the restaurant’s authentic Thai cuisine menu and beautiful new space. The Chamber, EDC and Town of Spruce Pine encourages everyone to show support as downtown continues to rebuild and grow stronger.
